The 2020 U.S. Pulse Quality Survey is published and available. The pulse quality survey is a report that provides proximate quality parameters (moisture, protein, total starch, soaking ability, starch properties, color, and canning quality) and data on total micronutrients (iron, zinc, calcium, magnesium, potassium, selenium, beta-carotene) and phytic acid concentrations in dry peas, lentils, and chickpea that are commercially grown in the USA.
